Lamb Curry


I made this yummy lamb curry the other day on hubby's request bless him he doesn't request food often and its been ages since I made this as it takes a long time to make. After eating it though you realize it was all worth it and it makes wonderful leftovers! Our little dog Sachin (hubby named him!) also loves it when I make this as he gets the bones!

Ingredients

  • 3 lamb shanks or chops - chopped
  • one red onion
  • 7 curry leaves
  • 3 green chilis
  • ginger/garlic paste one teaspoon
  • 4 potatoes
  • masala powder about 2 tablespoons or to taste
  • whole masala with cloves, cumin seeds, pepper corn etc (unground)
  • salt to taste
  • chili powder to taste
  • coriander powder one teaspoon
  • 2 small tomatoes
  • 1/4 cup frozen grated coconut

Step one:

The paste – this step really makes the difference with this curry

  1. fry 2 green chili’s 1/2 of the onion, curry leaves, ginger/garlic paste and whole garam masala- add coriander seeds, cumin seeds, cardamon, bay leaves, till golden brown
  2. near the end add grated coconut
  3. grind and set aside for later

Step 2:

The Curry

  1. peel and cube potatoes and boil
  2. then fry the rest of the onion with ginger/garlic paste, salt, chili powder coriander powder and masala powder add the lamb and fry till a little cooked with tomatoes
  3. pressure cook if desired for one whistle will make it tender
  4. Finally add the potatoes and paste and simmer for 20 min.
