Plantain Curry

I learnt this dish from my Mum in law last summer its a great way to prepare Indian green plantains its easy to make and loaded with spicy flavor and it makes hubby happy as its one of his favorite side dishes! 

I love having a food blog as I search recipes I have stored and learnt from others and re create dishes and tweak them :-), thats what I hope the Chow and Chatter  iPhone recipe app will be for folks, its now been submitted to apple for approval so stay tuned!!



Ingredients:
  • 3 medium plantain
  • 1/2 onion
  • 3 chopped  tomatoes
  • 3 cloves of garlic, chopped
  • canola oil
  • mustard seeds a few
  • fennel seeds a few
  • curry leaves 4-5
  • masala powder 1 spoon
  • pinch of cumin


Method:

  1. remove the outside skin of the plantain and cut into 1/2 inch slices set side, after soaking in a dish of water for one hour 
  2. heat the oil and pop the mustard seeds and fennel, add the curry leaves
  3. then add the onion, and garlic and saute for 5 minutes, add the tomato, and reduce the heat down to a simmer, ensure you don't rush this step I have learnt with Indian cooking making the curry paste is key for a great dish :-)
  4. add turmeric, and masala powder, salt to taste and a 1/4 cup of water add plantain and cover for 7-10 minutes, or until soft

This picture was taken last weekend at a diwali party at Wake Forrest University in Winston Salem, it had a lovely cultural program and Indian dance performances Jasmines adored it and called it a dance party! If you have something like this in your city go, its so much fun, thats our friend George laughing next to hubby he really enjoyed it as well.

 Its so important to embrace other cultures and celebrate their customs with them (you can do this without changing your beliefs LOL - Christmas is still my favorite he he he, but I am Christian but its fun to learn from others and important for children to learn to love and respect all)

I even carved my first jack o lantern yesterday he he ! I didn't grow up celebrating Halloween in the UK.
