This recipe was inspired by The Baking Barrister a wonderful and creative blog, she served halibut with Gremolata. I came to find out that Gremolata is a traditional Italian condiment made from finely minced parsley, garlic and lemon zest. This zesty garnish is a traditional accompaniment to Milanese Veal shank, it served as both a garnish and a condiment.
I actually made the gremolata and baked it with the halibut in my Le Creuset to infuse the flavors more and served over cous cous this one is a keeper.
Ingredients:
- 2 wild Alaskan Halibut steaks
- 1/2 a cup chopped fresh Parsley
- one shallot diced
- 3 cloves of finely chopped garlic
- about one tablespoon chopped mint
- the zest from one lemon and lemon juice
- salt and pepper to taste
- olive oil
Method:
- mix the parsley, mint, lemon juice, zest, shallots, garlic and olive oil together to make the gremolata
- add the halibut to the oven proof dish drizzle with olive oil and coat with gremolata and bake for 20 minutes at 350
- serve over cous cous and vegetables
- enjoy
