Mushroom Fried Rice


Heres a simple recipe for mushroom fried rice, easy to make and makes a great light lunch or something you could take to work. Our little one loves mushrooms so it went down well with her. Mushrooms are a great source of phosphorus, magnesium, potassium and selenium, valuable trace nutrients. 



Ingredients:
  • about 10 small mushrooms thinly sliced
  • 2 eggs to scramble into the mixture
  • 5 spring onions/scallions thinly sliced 
  • one cup of cooked rice, I use a rice cooker and just when it stops I add to vegetables
  • 3 cloves of chopped garlic
  • about a teaspoon of chinese five spice
  • 1-2 tablespoons of soy sauce 
  • 1/2 a diced zucchini
  • a handful of frozen peas
Method:

  1. heat a little canola oil and saute the spiring onion, mushrooms and garlic for 4 minutes 
  2. then add the five spice, zucchini and peas, scramble 2 eggs into the mixture
  3. continue to stir fry until vegetables are cooked
  4. then add cooked rice and soy sauce and serve


This makes a delicious and healthy quick meal when your running short of time. 

We spend the day in Charlotte yesterday and had lunch at La Toscana its a wonderful Zagat rated Italian restaurant near South Park Mall, its 1 1/2 hours drive from here but the food is worth it. Then on the way home we got to hand out with the lovely Prerna from Indiansimmer.com Jasmine had the best time playing with her daughter.
