I got these fresh noodles in my local Asian store (Banh pho Tuoi ) recently I simply adore fresh wide noodles, I added shrimp and baby bok choy and seasoned. In no time at all a wonderful one pot meal was created. Bok Choy is a nutritional powerhouse being a rich source of calcium, vitamin A and iron and vitamin C.

Ingredients:
- 3 small baby Bok Choys
- one teaspoon ginger/garlic paste
- about one cup of shrimp
- about 10 leaves of fresh Thai Basil
- 2 tablespoon of oyster sauce
- a dash of sugar
- one - two tablespoons of soy sauce
- a dash of sesame oil
- 1/2 a thinly chopped onion
Method:
- heat a little canola oil in a pan add the sesame oil and ginger/garlic paste and onion and stir for a few minutes
- then add the bok choy with sugar and cover let it reduce down for 3 minutes
- add the oyster sauce and soy, shrimp and stir until cooked
- meanwhile cook the noodles in boiling water for about 5 minutes drain
- mix with fresh Thai Basil
- enjoy :-)
