5 Spice Chicken with Jade Rice


Fairly recently two of my favorite bloggers each posted one of these recipes, Birin from Roti and Rice made a wonderful 5 spice whole roasted chicken and Ann from Anncoo Hobby made a Jade fried rice.  This inspired me to combine the two and what a great pairing it was.







Ingredients:
  
marinade for chicken 
  • 1/2 teaspoon 5 spice powder
  • 1/2 teaspoon ginger/garlic paste
  • one tablespoon rice wine vinegar
  • 2 tablespoon soy sauce 
  • dash of sesame oil 

for the rice:

  • one cup of cooked rice
  • one cup of spinach 
  • 2 cloves of chopped garlic 
  • 2 eggs whisked a little with a pinch of salt and pepper 
  • dash of soy sauce 
  • 1/4 an onion chopped 
Method:

  1. combine the ingredients for the chicken marinade and marinate the chicken in it for a couple of hours, I cooked a couple of chicken quarters
  2. roast in oven with a lid at 350 for 20 minutes and then another 15- 20 minutes with the lid of
  3. for the Jade fried rice, I sauteed the garlic with the spinach until it cooked down then blended it 
  4. I then stir fried the onion in a wok on high added the rice, spinach and egg and stirred like crazy to cook the egg :-)
