This dish was inspired by this fun clip on how to roast a whole fish in The New York Times, its so simple and we now make it all the time.
Its easy to roast a whole fish while the fish may be expensive to buy we find we get at least two meals from it when combined with cous cous or quinoa and a salad.
you can get super creative with the fillings and flavors or enjoy the simple and delicious taste of the fish :-)

Its easy to roast a whole fish while the fish may be expensive to buy we find we get at least two meals from it when combined with cous cous or quinoa and a salad.
Ingredients:
- one or two fish of choice, I think this was grouper or whole snapper works well
- one lemon
- 3 cloves of garlic
- a few springs of fresh basil
- a pinch of sea salt
- olive oil
Method:
- simply stuff the fish with garlic, lemon and basil, sprinkle with salt and olive oil
- bake at 400 for 15 minutes or until done
- gently remove fish from bones and add a little more fresh lemon juice, olive oil and salt to tasty
- serve and enjoy
