Asian Style Pork Meatball Soup


I recently got some lovely minced pork at the farmers market with some shitake mushrooms and came up with a noodle and meatball soup. It ended up making a huge pot and was good for leftovers. I adore a good ramen soup with a tasty broth, full of vegetables. Funny one of the best soups I have eaten recently was in the center of Munich we took the train into the center and were starving a Japanese restaurant was the first place we saw and it was so good. Our little ones love slurping their noodles too.

 Next week we are headed to California for a holiday, going to Sonoma and Napa for the first time and San Francisco. Ingredients:

  • a small pack of minced pork
  • 2 cloves of chopped garlic
  • one pack of ramen noodles
  • 1/2 a teaspoon of 5 spice
  • 1/4 of a tomato chopped
  • 2 cups of vegetable stock
  • 2 cups of water
  • 4 spring onions finely chopped
  • one cup of shitake mushrooms sliced
  • 1 teaspoon of oyster sauce 
  • a dash of fish sauce 
  • a dash of soy sauce 
  • one small radish thinly sliced
  • one small zucchini thinly sliced
  • one small egg
  • a handful of panko
  • one teaspoon ginger/garlic paste
Method:

  1. mix the pork with the egg, panko a little 5 spice, oyster sauce, garlic and spring onion
  2. form into meatballs and cook in a medium hot pan until nearly cooked about 7-10 minutes turning as they brown
  3. meanwhile heat a little canola oil add one teaspoon of ginger garlic paste, the tomato and 5 spice and let it make a paste 
  4. add the vegetable stock and water and turn down to a simmer
  5. add the shitake, radish and zucchini and noodles and simmer for 5-10 minutes
  6. add a little soy sauce and fish sauce
  7. then add the meatballs 
  8. simmer for about 5 minutes 
  9. serve and garnish with chopped spring onion 






Really excited to get some good food on our trip, particularly Chinese in China town and Japanese, San Francisco reminds me of Vancouver and Melbourne Australia for its large Asian population and first class Authentic food. Yippee can't wait :-)
