I am rather partial to egg drop soup, its easy to put together and the way the egg cooks fascinates me. Eggs are super foods a good source of protein, choline, Vitamin B6, iron (in the yolk) and are fine in moderation. We enjoy plenty at our house, I often boil a couple for picnic lunches for the kids or on road trips. This is a versatile recipe and really you could get creative and add anything to it.
Ingredients:
- 1 Large egg (beaten)
- 2 Tomatoes, chopped
- one teaspoon of five spice powder
- one small can of crab meat
- one teaspoon ginger/garlic paste
- 1 1/2 cups vegetable stock
- 2 cups water
- a dash of fish sauce
- 1/2 cup frozen pea
Method:
- heat a little canola oil in a wok on high, add ginger/garlic paste, five spice and tomato and let it reduce down to a paste
- add stock, fish sauce, peas and crab meat and simmer for 10 minutes
- Beat egg and pour in as the soup is boiling stirring it as you add, it helps if someone can stir for you :-)
