Steamed Sole with Ginger and 5 Spice




I adore the Chow and Chatter facebook recently we were talking about different cooking methods and the sweet Min Choi linked up the wonderful clip below of a simple steamed fish with ginger, scallions and five spice. The method is pure genius using a wok type pan with boiling water, a ramekin and plate with a lid to steam, no steamer needed. This whole meal is super healthy and can be made in 20 minutes what's not to love. 

Ingredients:

  • 4 pieces of sole or any thin white fish
  • 3 tablespoon of rice wine vinegar I used mirin
  • 3 tablespoon of soy sauce 
  • 1/2 teaspoon of Chinese 5 spice powder
  • a small piece of fresh ginger cut in Julienne about 15 pieces
  • a teaspoon of sugar 
  • one tablespoon of soy sauce and one tablespoon of oyster sauce mixed with a pinch of sugar for bok choi
  • a couple of bunches of baby bok choi chopped 
  • 1/2 a teaspoon ginger/garlic paste
Method:

  1. combine the soy sauce, mirin, 5 spice and sugar and mix cover the fish with it and allow it to marinate for 30 minutes with the ginger
  2. as it marinates cook the rice
  3. heat a little canola oil add ginger garlic paste to it and add bok choi, cover with a lid and let it steam in its own moisture for 5 minutes on medium heat 
  4. add the soy sauce, sugar and oyster sauce to it and put aside
  5. then get a large wok add a little water to the base and allow it to come to a boil, add a ramekin
  6. once it is producing steam add the fish with some marinade and fresh ginger on top to a plate, place on top of the ramekin add the lid and steam for exactly 4 minutes 
  7. serve the fish with the bok choi and rice
  8. enjoy
