I made these fish cakes recently pretty easy to put together and I loved the spices added. I love fish cakes as the flavor combinations are endless. Also you could add any fish, I used sole, but cod, salmon, haddock whatever is on special would work well.
Ingredients:
- 1/4 teaspoon of cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon of coriander
- a small bunch of finely chopped parsley
- a pinch of turmeric
- 2 cups of mashed potatoes
- 1/2 cup of panko
- 4 filets of sole lightly poached in one tablespoon of butter
- salt to taste
Method:
- boil and mash the potatoes, add a little milk and butter and keep to one side
- lightly poach the fish and use a fork to make it into flakes
- add the herbs and spices to a bowl then add the mashed potato and fish
- form into patties and coat in panko
- lightly pan fry in olive oil for about 3 minutes on each side until lightly browned
- enjoy with a little fresh lime juice
- they can be eaten with salad, cous cous, rice or as a starter
