Lightly Spiced Fish Cakes


I made these fish cakes recently pretty easy to put together and I loved the spices added. I love fish cakes as the flavor combinations are endless. Also you could add any fish, I used sole, but cod, salmon, haddock whatever is on special would work well. 

Ingredients:

  • 1/4 teaspoon of cumin
  • 1/4 teaspoon paprika 
  • 1/4 teaspoon of coriander
  • a small bunch of finely chopped parsley
  • a pinch of turmeric 
  • 2 cups of mashed potatoes 
  • 1/2 cup of panko
  • 4 filets of sole lightly poached in one tablespoon of butter
  • salt to taste
Method:

  1. boil and mash the potatoes, add a little milk and butter and keep to one side
  2. lightly poach the fish and use a fork to make it into flakes
  3. add the herbs and spices to a bowl then add the mashed potato and fish 
  4. form into patties and coat in panko
  5. lightly pan fry in olive oil for about 3 minutes on each side until lightly browned
  6. enjoy with a little fresh lime juice 
  7. they can be eaten with salad, cous cous, rice or as a starter
