Musings and Butterfly Cupcakes



These little butterfly cupcakes were one of my favorites when I was little easy to make and they really do look like butterflies. I added a little tea to the butter icing and decorated with licorice. I also like them as years ago as a student one of my neighbors said I was like a butterfly.


 I have been battling with comparison recently, comparing myself to other bloggers, dietitians and so forth. Lets be honest we all do this at times and like the famous Mark Twain quote comparison really is the thief of Joy. Its funny in the blogging world particularly with the best of lists and so on I think it makes it hard for all of us. I have been blogging quite a while now over 4 years and have seen the rise of many successful bloggers, sadly a lot unfollow me on twitter as they make it so to speak. The best folks don't and stay grounded. 

I have personally evolved and come a long way over the last few years and gained a wide range of experience in unique areas' different from working as a clinical dietitian. I have written company blogs, managed social media and coached on social media for clients. I have developed with help two apps for iphone one chow and chatter a recipe app and Go social a social media tips app. I have also grown as a professional speaker, I truly thank my friend Amber @RDAmber for getting me to speak at Nebraska State meeting over a year ago and more recently at MINK. I have also given talks at Kings College London through another twitter contact Diane @cherries_r_yum a wonderful person and at local business meetings. More recently I have spoke on how to be a global dietitian and embrace other cultures. I have also written e books and done a couple of cooking segments on local TV. But I still find myself falling prey to comparing thinking will I ever make these lists? will all this social media turn into steady paid work?

also its key to surround yourself with uplifting people who believe in you. We are all special and valuable and have a unique story be YOU. 

Lets celebrate our own qualities be happy for all and be content where we are knowing that there are endless possibilities and adventures to be had up ahead.






Ingredients:


  • 4 oz self raising flour
  • 4 oz butter 
  • 4 oz sugar 
  • 2 eggs
  • a dash of vanilla essence
  • confectioners sugar to mix with butter for butter cream- about 2 oz butter and 3 tablespoon sugar blended, one teaspoon of tea

Method:

  1. cream the butter and sugar
  2. add eggs and flour and vanilla
  3. add to cupcake cases and bake at 350 for 10-15 minutes 
  4. allow to cool then carefully slice a disc out of the top and cut in half for the wings
  5. fill with tea infused butter icing, add the wings and use licorice to decorate
