Jamaican Steamed Fish

On one of our last days in Jamaica we ate at a small beach restaurant and I ate a dish they called steamed fish, it was delicious I promptly went over to the cook and asked how she cooked it. Its a simple recipe, I used fish seasoning from Jamaica but I am tempted to make my own as it was over salty to me. So lets taste the Caribbean :-) 


Ingredients:

  • 5 fillets of flounder, turbot or sole any thin white fish will work
  • 2 carrots chopped
  • a few sprigs of fresh thyme
  • 1/2 a red onion chopped
  • 3 cloves of garlic chopped
  • 4 small spring onion chopped
  • one cup of water
  • one tablespoon of butter
  • one tablespoon of ketchup
  • 2 tablespoon of fish seasoning (ingredients- salt, rice flour, pimento/ allspice, garlic, white pepper, black pepper, red coloring - I would try and get annatto as natural).
Method:

  1. sauté the garlic in the butter with the onion for 5 minutes, add the carrots, potatoes if desired and okra, add ketchup, thyme and seasoning with the water
  2. then add the raw fish so the stock covering it and allow it to simmer for 10-15 minutes until soft
  3. serve with rice, cous cous  or a baked potato 






Hope your all well, I have been a tad dizzy but its not serious have a little vertigo and should go soon,  the kids are well joined a local pool and they start swim lessons today.
