Doro Wot (Ethiopian Chicken Stew)

One of our favorite things to do is try new foods and expose the kids to new food cultures and flavors. We recently ate at an Ethiopian restaurant in Greensboro NC and really enjoyed it the kids particularly liked the chicken stew. So I re created it and have made it a few times since.


Ingredients:

1 tablespoon of  butter 
1 tbsp. minced  fresh ginger
1/2 red onion chopped
4 cloves garlic minced 
3 tbsp. Berbere an Ethiopian spice blend I found some at whole foods 
1 can of diced tomatoes 
8 chicken drumsticks
salt and freshly ground black pepper  to taste
5 hard-boiled eggs

Method:

  1. heat the butter with the ginger, garlic and onions until soft for about 15 minutes
  2. then add the can of tomatoes and blend to get a nice sauce 
  3. add the berbere and simmer for a few minutes 
  4. then add the chicken and cover, simmer for 20-30 minutes until cooked
  5. meanwhile boil the eggs and peel them
  6. add the eggs to the stew season with salt and pepper 
  7. and serve with rice  


Stew's are wonderful in the winter and make great leftovers we just returned from a weekend trip to Washington DC to visit family. It was so cold but we still enjoyed the National Museum of Natural Science and seeing a frozen potomac and monuments. If its cold in your neck of the woods stay warm and know that spring will come :-)
