Tis the Season for soups and stews :-) I made this beef stew recently its been on Chow and Chatter before but worth sharing again, I learnt it from my Mum its easy to make and perfect healthy comfort food.
Ingredients:
- One medium Rutabaga chopped or Swede to us Brits - I bet pumpkin would also be wonderful
- 2 chopped carrots chopped
- one large onion chopped
- 4 carrots chopped
- one large pack of stewing beef
- 2 tablespoons of Herbs de Provence (my touch :-))
- 4 cloves of chopped garlic
- one liter of beef stock
- flour to thicken
- 1/2 a cup of fresh chopped parsley
Method:
- saute the meat, garlic and onions in olive oil for 5 minutes to brown, coated with a little flour
- add vegetables with herbs de Provence and a beef stock
- turn down to a simmer for about 2 hours
- just before serving thicken with corn starch
- serve with mashed potatoes
