Chocolate and Raisin Cupcakes

I made these super simple cupcakes the other day, remember I am not a very good baker :-) and got a couple of simple gel cake decorating pens for our little one to decorate them afterwards. 
Hubby and I like simple cakes without the butter or heavy frosting but your welcome to Jazz them up a little!


Ingredients:

  • 4 oz self raising flour
  • 4 oz sugar
  • 2 eggs
  • 4 oz butter
  • 2 tablespoon cocoa
  • handful of raisins
  • dash of vanilla essence
Method:

  1. cream the sugar and butter till light and fluffy
  2. add the eggs and flour little by little
  3. then mix in the raisins, vanilla and cocoa
  4. bake at 375 for 10-15 minutes until firm



She added a splash of color, but to be honest 2 year olds aren't really into the baking thing yet lol
