I made this wonderful lentil dish last week, easy to make and super nutritious rich in iron, protein and fiber. I learnt this recipe from a Greek friend at university in fact most of my best recipes are learnt from friends and family as I nag them to teach me!!
Ingredients:
- one cup of the big brown lentils
- 1/2 a red onion chopped
- 6 cloves of garlic chopped
- Greek herbs or Italian one tablespoon
- oregano one teaspoon
- 2 tablespoon of a good olive oil
- 1/4 cup tomato puree
Method:
- soak the lentils for a few hours
- then saute the onions and garlic for 5 minutes in olive oil
- add the tomato paste and lentils and about 2-3 cups of water
- mix in herbs and more olive oil and simmer for 30-45 minutes until lentils are soft
- I love to eat this with fresh bread or pita and a Greek salad
Hubby loved this one its like Dal :-), we are headed to Florida for a few days :-) my hubby works hard and plays hard, he lives for travel and when he's home works long hours and takes extra shifts to fund the next trip. I do love this about him but to be honest at times I wish we took fewer trips and he worked less but we all know folks don't really change much and his profession works a lot!
I have been blessed over the years to travel with him :-) though and feel very fortunate, so mustn't complain.
