Sorakkai (Bottle Gourd) Stir Fry


Here's another lovely Indian recipe for you, using Sorakkai it is vegetable commonly eaten in India and China in America its allowed to age and used as an ornamental gourd and in many parts of the world it is used to make bowls and cups or musical instruments. It is high in water, potassium, vitamin C, folate and calcium. It makes a lovely vegetable side dish one of my hubby's favorites. 





This is what it looks like I get it from my local Indian store. Its also great added to dal or sambar. 


Ingredients:

  • One bottle gourd/ sorakkai, cubed 
  • 2 tablespoon of shredded coconut 
  • 1/2 teaspoon of mustard seeds
  • a pinch of cumin seeds
  • a pinch of masala powder
  • salt to taste 
  • 1/4 red onion chopped
  • a handful of curry leaves
Method:

  1. heat a little canola oil and pop the mustard seeds with the cumin seeds and curry leaves
  2. then add the onion and saute for about 4 minutes 
  3. add the sorakkai, masala powder and salt slowly stir fry for about 15-20 minutes until cooked 
  4. near the end add in the coconut
